Colors are so important to Death because that is how he defines the human world and certain situations. After being at his job for so long, the world in his view would begin to mesh. In order to separate things, he uses colors.

They're his way of describing things and showing feelings around him and his life. Death puts colors to feelings and symbols.

Death always associates color with different situations at which people are dying. He describes the day as a color, it's almost as if color is the equivalent of our feelings.

Colors are so important to death because they represent things. He puts colors to feelings and things. Like the brown uniforms represent the Nazis. And the black, red, and white, on each other represent the Nazis.
